Have you checked
Set($UseFriendlyFromLine ,
In the RT_Config file:
# By default, RT sets the outgoing mail's "From:" header to
# "SenderName via RT".  Setting this option to 0 disables it.
Set($UseFriendlyFromLine , 1);
