You will want to create a softlink in the /etc/smrsh folder to the
executable you wish to run.

Ex:

ln -s /path/to/file/stripmime.pl /etc/smrsh

smrsh limits the programs that can be run by sendmail. They are usually
configured in the /etc/smsrh. It is considered a bad idea to add perl
etc to
the acceptable executables list.

I'm not really familiar with it since I use qmail so perhaps do a man
smrsh
for more details.
