[rt-users] RT-Mailgate fill in Global Custom Fields from e-mail

You can do it with simple Scrip, but if you wish something more generic
there is contribution 'ExtractCustomFieldValues' at
http://wiki.bestpractical.com/index.cgi?Contributions
