[rt-users] How do you set up email reminders for reminders added to a ticket's metadata?

This is not a feature of RT's reminders.
You can create a dashboard that searches for type = 'reminder' and has
a due date of the given day and get it mailed out, but there is no
built in feature for emailing about reminders on their due date.
